CHERRY TOMATO MOZZARELLA SAUTE

This dish is fast to fix and full of flavor. The mix of cherry tomatoes and mozzarella make it the perfect partner for almost any main dish.

2 tsp. olive oil

1/4 cup chopped shallots

1 tsp. minced fresh thyme

1 garlic clove, minced

21/2 cups cherry tomatoes, halved

1/4 tsp. salt

1/4 tsp. pepper

4 oz. fresh mozzarella cheese cut into 1/2-in. cubes

1. In a large skillet, heat the oil over medium-high heat; saute shallots with thyme until tender. Add the garlic; cook and stir 1 minute. Stir in the tomatoes, salt and pepper; heat through. Remove from heat; stir in cheese.
