This is one of my favorite ways to use butternut squash, which I love not just for its flavor but because it’s full of vitamin A. I usually make it when I'm grilling steak or chicken.

Takes: 20 min. • Makes: 4 servings
3 Tbsp. olive oil
2 garlic cloves, minced
1/4 tsp. salt
1/4 tsp. pepper
1 small butternut squash, peeled and cut lengthwise into 1/2-in. slices
1. In a small bowl, combine the oil, garlic, salt and pepper. Brush over the squash slices.
2. Grill the squash, covered, over medium heat or broil 4 in. from the heat until tender, for about 4-5 minutes on each side.
