I created this recipe by accident when the weather was very hot and I didn’t want to cook in the house. I threw the green beans on the grill and forgot about them, and they turned out great!

Takes: 30 min. • Makes: 4 servings
1 lb. fresh green beans, trimmed
1/2 tsp. Cajun seasoning
1 Tbsp. butter
1. Place green beans on a double thickness of heavy-duty foil (about 18 in. square). Sprinkle with Cajun seasoning and dot with butter. Fold foil around the beans, sealing tightly.
2. Grill, covered, over medium heat for 9-11 minutes on each side or until the beans are tender. Open foil carefully to allow steam to escape.
3/4 cup: 56 cal., 3g fat (2g sat. fat), 8mg chol., 109mg sod., 7g carb. (3g sugars, 3g fiber), 2g pro. Diabetic exchanges: 1 vegetable, 1/2 fat.
