PEANUT BUTTER COOKIES

It's truly amazing how much flavor these simple cookies have. I make them often because I always have the ingredients on hand.

Takes: 30 min. • Makes: 2 dozen

1 large egg, room temperature, beaten

1 cup sugar

1 cup creamy peanut butter

1. Preheat oven to 350°. In a large bowl, mix all ingredients. Scoop level tablespoonfuls and roll into balls. Place on ungreased baking sheets and flatten with a fork.

2. Bake for about 18 minutes or until set. Remove to wire racks to cool completely.
