CRANBERRY PEAR TART

The combination of fresh pears and apple juice give this tart its own distinct appeal. Because it’s made with juice instead of sugar, each serving has half the calories of an average slice of apple pie.

1 sheet refrigerated pie crust

4 cups sliced peeled fresh pears (about 4 medium)

1/3 cup dried cranberries

1/3 cup thawed apple juice concentrate

1 tsp. apple pie spice

1. Preheat oven to 375°. Press crust onto the bottom and up the sides of an ungreased 9-in. tart pan with removable bottom; trim edges. Generously prick the bottom with a fork; set aside.

2. In a large skillet, cook the pears, dried cranberries, apple juice concentrate and apple pie spice over medium heat until the pears are tender. Pour into crust. Bake until the crust is golden brown, 30-35 minutes. Cool the tart on a wire rack.
