Cucumber Avocado Ginger Salad

A simple and refreshing salad

Ingredients:

½ avocado, chopped small

½ cucumber, peeled and chopped small

1 tablespoon of fresh ginger, grated

1 tablespoon of olive or sesame oil

1 tablespoon of goji berries

1 teaspoon of lemon juice

Salt

Directions:

1. Combine the avocado, cucumber and ginger in a bowl.

2. Add oil and salt; toss to mix.

3. Add the berries as toppings.
