You can use the chicken leftovers in a variety of way.

Ingredients:
4 pounds of chicken breasts, bone in, skin on
3 cups of low sodium chicken broth
2 cups of carrots, grated or julienned
¼ cup of fish sauce
1/3 cup of fresh basil, sliced
1/3 cup of fresh mint, sliced
½ cup of lime juice
3 shallots, sliced very thin
2-4 Thai chilies, sliced very thin
2 tablespoons of packed light brown sugar
2 teaspoons of lime zest
1 teaspoon of crushed red pepper
Directions:
1. Put the shallots, sugar, pepper, broth, zest and fish sauce in a crockpot.
2. With the meat side facing down, add the chicken and cook for 6 hours on low or for 3 hours on high.
3. Transfer the meat to a chopping board, remove the skin and shred the chicken.
4. Return the shredded chicken to the crockpot, add the remaining ingredients and stir to combine.
