Ingredients:
1 (3 pounds) chuck roast, boneless
2 cups of water
½ cup of chopped onion
¼ cup of balsamic vinegar
1 tablespoon of kosher salt
1 teaspoon of garlic powder
1 teaspoon of black ground pepper
¼ teaspoon of xanthan gun
Chopped fresh parsley
Directions:
1. Rub the garlic, pepper and salt into the roast.
2. Brown the roast in a heavy bottom pot. Add the vinegar to deglaze the pot and cook for 1 minute.
3. Add the onion and water; leave it to boil.
4. Cover the pot and leave to simmer for 3-4 hours on low.
5. Transfer the roast to a large bowl and gently break it into chunks. Discard any large pieces of fat.
6. Whisk the xanthan gum into the pot and return the roast to the pot.
7. Garnish with parsley and serve.
