Pork Soup

All the goodness of Chinese cuisine made with ingredients from your pantry.

Preparation time: 10 minutes

Cooking time: 35 minutes

Servings: 6

Ingredients:

1 pound of pork shoulder, chunked

3-4 cups of chopped bok choy

3 cups of water

¼ cup of cilantro

6 garlic cloves, crushed

3-inch crushed ginger

2 tablespoons of black vinegar

2 tablespoons of doban Jiang paste

2 tablespoons of peanut oil

2 tablespoons of soy sauce

½ onion, sliced

2 teaspoons of Szechuan pepper, coarsely crushed

1-2 teaspoons of sugar

1-2 teaspoons of salt

Directions:

1. Heat oil in an instant pot and sauté the garlic and ginger for some minutes.

2. Add the pork, water, vinegar, doban Jiang paste, soy sauce, onion, pepper, sugar and salt to the pot. Stir to combine.

3. Cook for 20 minutes at high pressure. Naturally release pressure for 10 minutes before releasing any remaining pressure.

4. Add the bok Chou, cover the pot and leave it to sit for 10 minutes.

5. Serve with a garnish of cilantro.
