Easy Seafood Chowder

Put this delicacy together in just 20 minutes.

Preparation time: 10 minutes

Cooking time: 10 minutes

Servings: 6

Ingredients:

9 (43/48-oz) cans of clams, drained solids, mixed species

1 (4-oz) can of blue crab

½ pound of shrimp

1 ½ cup of chicken broth, consommé or bouillon

12 cherry tomatoes

3 medium celery stalks

4 tablespoons of chopped shallots

4 tablespoons clam juice

2 tablespoons of light olive oil

½ teaspoon of garlic

1/8 teaspoon of black pepper

1/8 teaspoon of Italian seasoning

Directions:

1. In a medium pot, sauté the shallots and garlic in the olive oil for 2 minutes until translucent.

2. Add the tomatoes, Italian seasoning, broth, celery and pepper. Stir and give it time to simmer for 3 minutes.

3. Add the clams, shrimp and crab; allow to simmer for 5 minutes until the shrimp is pink and firm.
