Clam Chowder

Packed with delicious mushrooms.

Preparation time: 5 minutes

Cooking time: 15 minutes

Servings: 2

Ingredients:

1 (6 ½-oz) can of chopped clams with its juice

8 ounces of sliced mushrooms

1 cup of vegetable, fish or chicken broth

½ cup of heavy cream

2 green onions, chopped

2 tablespoons of unsalted butter

¼ teaspoon of xanthan gum

Salt

Black pepper

Chopped fresh flat leaf parsley

Directions:

1. Heat the butter in a pan until it melts, add the oil and sauté the mushrooms and green onions for 3-4 minutes until they begin to soften.

2. Add the broth and clam with its juice; sprinkle the xanthan gum over it and give it time to boil. Lower heat and simmer for 5 minutes.

3. Add the cream, stir and heat. Taste and adjust seasoning.

5. Garnish with parsley and serve.
