Ingredients:
32 ounces of chicken broth
2 cups of pumpkin puree
½ cup of chopped onions
½ cup of heavy cream
1 garlic clove, chopped
2 tablespoons of olive oil
1 tablespoon of chipotles in adobo sauce
2 teaspoons of granulated sugar substitute
2 teaspoon of red wine vinegar
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1/8 teaspoon of ground allspice
Salt
Pepper
Directions:
1. In a medium pan, heat oil and sauté the garlic and onions for 3-4 minutes until it is translucent.
2. Add the allspice, chipotle, sugar substitute, cumin and coriander; stir and cook for 2 minutes.
3. Add the chicken puree and broth: bring to a simmer for 5 minutes.
4. Blend with an immersion or regular blender until smooth.
5. Add the vinegar and cream; simmer for an additional 5 minutes or note.
6. Taste and adjust seasoning.
