You can eat this soup on its own or with your choice protein

Ingredients:
6 cups of water
1 ½ cup of roughly chopped bok choy
½ cup of green beans, individual bean sliced into three
¼ cup of scallion, green part only, chopped
1 medium carrot, chopped medium
1 small turnip, chopped medium
½ large tomato, chopped medium
½ zucchini, julienned
1 tablespoon of olive oil
1 ½ teaspoons of dried oregano
1 ½ teaspoons of dried basil
1 ½ teaspoons of paprika
¼ teaspoon of ground black pepper
¾ teaspoon of salt
A pinch of red pepper flakes, optional
Directions:
1. In a pot, heat oil over medium heat and sauté the basil, paprika, scallion, oregano and pepper for about 2 minutes.
2. Add the remaining ingredients, except the bok choy, and sauté for about 5 minutes. Halfway through cooking, stir to coat all the veggies evenly.
3. Pour in the water and bring to a boil.
4. Reduce heat to low and simmer for 15-20 minutes until the carrots and turnips are a bit soft.
5. Remove from heat and add the bok choy.
6. Stir, taste and adjust seasoning.
