Ingredients:
4 cups of small cauliflower florets
½ cup of chopped onion
¼ cup of unsalted tomato sauce or crushed tomatoes
1 medium jalapeño pepper, chopped finely
3 tablespoons of avocado oil
½ teaspoon of salt
½ teaspoon of ground cumin
Lime wedges
Chopped fresh cilantro
Directions:
1. Process the cauliflower in a food processor to form rice.
2. In a large pan, heat oil over medium high heat and sauté the jalapeño and onion for 2-5 minutes until it is tender and starts to brown.
3. Stir in the tomatoes, riced cauliflower, salt and cumin; cook for 4-5 minutes until cauliflower is soft.
4. Garnish with cilantro and lime wedges.
