Ingredients:
1 (15-oz) can of diced tomatoes
10 ounces of green beans
5 cups of vegetable stock
1 cup of chopped carrot or pumpkin
4 garlic cloves, minced
2 large celery stalks, chopped
1 large chad, kale or spinach leaf, cut into thin strips
1 medium red bell pepper, chopped
1 medium onion, chopped
1 bay leaf
2 tablespoons of olive oil
1 heaping tablespoon of sweet paprika
1 tablespoon of hot sauce
3 teaspoons of turmeric
½ teaspoon of cinnamon
Directions:
1. Sauté the oil, celery and onion in a large pot for 5-10 minutes over low heat.
2. Add the garlic and sauté for about 1-2 minutes.
3. Increase heat to medium; add the carrots and peppers. Stir and cook for 1-2 minutes.
4. Stir in the spices and cook for about 1 1 minute until fragrant.
5. Add the stock and tomatoes; simmer for 15 minutes.
6. Add the chard and green beans; simmer for an additional 5 minutes or until the beans is done.
7. Taste and adjust seasoning.
