Ingredients:
1 stick of softened butter
2/3 cup of coconut flour
4 tablespoons of granulated sugar substitute
2 tablespoons of cacao nibs
2 eggs
2 teaspoons of vanilla
½ teaspoon of baking powder
Directions:
1. Line a baking pan and set aside.
2. Whisk the butter and sugar substitute together until it is fluffy, light and pale.
3. Add the remaining ingredients and combine until the batter starts getting thick.
4. With your hands, squeeze a little handful of the batter into a ball. Then using your fingers, press the ball into the shape of a cookie and arrange on the prepared baking pan.
5. Bake for 10-15 minutes at 350F or until the edges are golden brown.
