Ingredients:
3 cups of almond flour
½ cup of unsweetened applesauce
2/3 cup of fresh blueberries
¾ cup of monk fruit or granulated sugar substitute
3 large eggs
7 tablespoons of melted coconut oil
4 tablespoons of packed coconut flour
1 tablespoon of baking powder
2 teaspoons of vanilla extract
1 tsp sea salt
1 tsp baking soda
Directions:
1. Preheat oven to 350F.
2. Coat a muffin tin with cooking spray.
3. Combine the flours, baking soda, baking powder and salt in a medium bowl then set aside.
4. In a large bowl, use electric hand mixer to thoroughly beat the eggs, vanilla extract, applesauce, monk fruit, and oil until well combined.
5. Add the flour mix and blueberries to the egg mix; stir thoroughly to combine. Leave the batter for 5 minutes to enable the coconut flour absorb moisture.
6. Scoop the batter into the muffin tin and bake for 24-45 minutes until it turns golden brown and a toothpick inserted in the middle comes out clean.
