Baked Beef Meatballs
This amount is for 4 servings. Adjust for 2 if you want, eat one serving, freeze one or prepare it as is for 4 servings and then freeze 3/4 for some tasty casserole recipes like “Beef Meatballs Casserole with Green Beans” or with “Beef Meatballs Casserole with Broccoli”.
•  1 pound lean ground beef
•  2 tablespoons minced onion
•  1/2 teaspoon minced garlic
• • 2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Mix all of the ingredients in a large bowl using your fingers. Mix until the meat no long feels slimy from the eggs. Shape in golf ball size meatballs and place on a large baking sheet with sides. Bake at 375F for 20-25 minutes until the meatballs are cooked through. Serve with the large Fiber Loaded salad with Italian Dressing.
