Almond Cheese Spread

I love this dip recipe! It’s a great way to use up different kinds of cheeses I’ve already got on hand.

PREP: 10 MIN. + CHILLING • MAKES: 2 SERVINGS

1/2 cup shredded sharp white cheddar cheese

2 tablespoons mayonnaise

1/8 teaspoon onion powder

Dash pepper

Dash Louisiana-style hot sauce

1 green onion, chopped

1 tablespoon sliced almonds

Celery ribs or assorted crackers

In a small bowl, combine the first five ingredients; stir in green onion and almonds. Cover and refrigerate for at least 4 hours. Serve with celery or crackers.

NUTRITION FACTS 1/4 cup (calculated without celery and crackers) equals 185 cal., 16 g fat (7 g sat. fat), 35 mg chol., 297 mg sodium, 3 g carb. (1 g sugars, 1 g fiber), 8 g pro.

TOP TIP

Toasting nuts deepens their flavor and gives them added crunch. To toast almonds, place them on a baking sheet and heat in a 325° oven for 5-7 minutes, stirring once or twice. Alternatively, cook them in a large skillet over medium heat, tossing regularly. For a variation, try ground or finely chopped almonds instead of sliced.
