Dried fruit provides a marvelous sweet accent in this easy-to-make loaf. It’s also terrific served cold for summer dining.

1 package (6 ounces) falafel mix
½ cup each: shredded zucchini, chopped mixed dried fruit
3 tablespoons each: coarsely chopped toasted pecans, thinly sliced green onion
2 eggs
¾ cup plain fat-free yogurt
1. Prepare falafel mix with water according to package directions; mix in remaining ingredients, except yogurt. Pack mixture into greased 7 × 4-inch loaf pan. Bake, uncovered, at 350 degrees until set, about 30 minutes. Invert loaf onto serving plate; serve with yogurt.
