CHILI-DRESSED TUNA SALAD WITH RADIATORE
A fun pasta, radiatore look like the tiny radiators for which they are named! Other shaped pastas can be also be used.
4 entrée servings
Chili Dressing (recipe follows)
3 cups (8 ounces) radiatore, cooked, room temperature
1 can (9¼ ounces) white tuna in water, drained, flaked
2 medium tomatoes, cut into wedges
½ medium avocado, cubed
2 tablespoons finely chopped cilantro
4 cups torn salad greens
1. Pour dressing over pasta in medium bowl and toss. Add remaining ingredients, except salad greens and toss; serve over greens.
Makes about ¼ cup
3 tablespoons lemon juice
2 tablespoons olive oil
½ teaspoon chili powder
¼ teaspoon crushed red pepper
1. Mix all ingredients.
