SPINACH TORTELLINI WITH MUSHROOMS
Try a flavored spaghetti sauce, such as roasted garlic, garden vegetable, or olive.

2 packages (9 ounces each) fresh spinach tortellini
8 ounces small whole mushrooms
1 cup each: chopped red bell pepper, frozen peas
¾ cup (3 ounces) shredded reduced-fat mozzarella cheese
1 jar (28 ounces) prepared spaghetti sauce
1. Combine all ingredients in 2½-quart casserole. Bake, covered, at 350 degrees until hot, about 30 minutes.
