SWEET-STUFFED FRENCH TOAST

A rich breakfast entrée with a sweet surprise inside! Serve with warm maple syrup or a drizzle of honey.

4 servings

4 thick slices sourdough or Italian bread (1-inch)

4 tablespoons fat-free cream cheese

4 teaspoons strawberry or other flavor fruit preserves

2 eggs

¼ cup fat-free half-and-half or fat-free milk

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1–2 tablespoons margarine or butter

1 cup maple syrup or light pancake syrup, warm

1. Cut a pocket in the side of each bread slice; fill with each with 1 tablespoon cream cheese and 1 teaspoon preserves. Lightly beat eggs, half-and-half, and spices in shallow bowl. Dip bread in egg mixture, turning to coat both sides.

2. Cook bread slices in margarine in large skillet on medium to medium-low heat until browned, about 5 minutes on each side. Serve with warm syrup.
