champagne strawberry cup

Serves 6

Preparation time 5 minutes

175 ml (6 fl oz) strawberry liqueur (such as fraises des bois), chilled

1 bottle non-vintage dry Champagne or dry sparkling white wine, chilled

125 g (4 oz) strawberries, sliced

Pour the liqueur into a large jug. Gradually add the Champagne or sparkling wine, stirring very gently so as not to lose the bubbles.

Divide the strawberry slices among individual Champagne flutes and top up with the strawberry-flavoured Champagne. Serve at once.

For kir royale, pour chilled dry Champagne or sparkling white wine into Champagne flutes. Slowly add 25 ml (1 fl oz) crème de cassis to each glass so that it gently mingles with the Champagne to give a pale pink glass of fizz.

For classic Champagne cocktail, place a sugar cube in each Champagne flute. Saturate it with Angostura bitters, then add 25 ml (1 fl oz) brandy to each glass. Top with chilled Champagne.
