turkey waldorf

Serves 4

Preparation time 20 minutes

125 ml (4 fl oz) mayonnaise

2 tablespoons lemon juice, plus extra to taste

375 g (12 oz) cooked turkey, shredded

3 celery sticks, sliced thinly

75 g (3 oz) shelled walnuts, roughly chopped

50 g (2 oz) raisins

1 small cos lettuce, thickly shredded

2 Red Delicious apples

salt and pepper

Put the mayonnaise in a large bowl, add the lemon juice and stir well to mix. Add the turkey, celery, walnuts, raisins and lettuce leaves to the mayonnaise and mix well again.

Core and thinly slice the apples, then add immediately to the salad and stir well to coat. Season to taste and add more lemon juice, if liked.

For turkey curry mayonnaise, combine 500 g (1 lb) cooked diced turkey, 1 red dessert apple, cut into small dice, 25 g (1 oz) sultanas or raisins, 25 g (1 oz) roasted salted peanuts, 6 tablespoons mayonnaise, 1 teaspoon curry powder, ½ teaspoon mild chilli powder and 1 tablespoon lime or lemon juice. Mix thoroughly and season to taste. Serve the mayonnaise on a bed of crisp lettuce leaves, garnished with coriander leaves.
