turkey sandwich

Serves 4

8 streaky bacon rashers

8 slices of wholemeal bread good-quality mayonnaise, for spreading

2 ripe tomatoes, sliced

small bunch of watercress

1 small ripe avocado, sliced

8 slices of cooked turkey breast

salt and pepper

Grill the bacon for 3–4 minutes on each side until golden and crisp. At the same time, toast the bread.

Spread 4 toast slices thickly with mayonnaise. Layer the tomatoes and watercress on top and add the avocado and turkey. Season well with salt and pepper and top with the crispy bacon. Cover with the remaining toast and press down lightly. Serve at once.

For turkey wraps, replace the bread with 8 tortillas and the watercress with 2 little gem lettuces. Chop the crispy bacon, finely chop the tomatoes and shred the lettuces. Mix together with 2 tablespoons soured cream, a splash of Tabasco sauce and a pinch of salt. Mash the avocado with the juice of 1 lime. Warm the tortillas under the grill or in the oven, then spread with the mashed avocado, a spoonful of the bacon mixture and a slice of turkey. Roll tightly and serve at once.
