SUBLIME LIME BEEF

It’s fun to watch the happy reactions of others when they try my lime beef kabobs. The meat on the skewers is so good, it’s hard not to smile after the first bite!

START TO FINISH: 25 MIN. MAKES: 4 SERVINGS


1/3 cup lime juice

2 teaspoons sugar

2 garlic cloves, minced

1 beef top sirloin steak (1 inch thick and 1 pound)

1/2 teaspoons pepper

3/4 teaspoon salt

2 tablespoons unsalted dry roasted peanuts, chopped

3 cups hot cooked brown rice

1. In a small bowl, mix lime juice, sugar and garlic until blended; set aside. Cut steak into 2x1x3/4-in. pieces; toss with pepper and salt. Thread beef onto four metal or soaked wooden skewers.

2. Grill kabobs, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side or until beef reaches desired doneness. Add peanuts to sauce; serve with kabobs and rice.

GRILL SKILL

When working with uncooked beef, always have a clean serving platter at the ready for the cooked food. Don’t reuse the dish you carried the food out to the grill. It’s also safest to baste food with a sauce after it’s been flipped once on the grill. This way, the basting brush isn’t touching the uncooked beef and then contaminating the sauce when you set the brush back into the container.
