Tiramisu with pears and speculoos
very easy
Ingredients
20biscuitsspéculoos
250g of mascarpone
5 eggs
1 pinch of salt (for the eggs in snow)
80s sugar
1sachet of vanilla sugar
2 juicy pears
Preparation
Separate the whites from the yolks. Blanch the egg yolks with the sugar, then add mascarpone. Set aside.
Wash, peel and seed the pears. Cover the bottom of a gratin dish with speculoos, then with a layer of sliced pears about 2 mm thick. The cookies will drink the juice of the pears which will replace the coffee of the traditional tiramisus.
Whip the egg whites until stiff. Incorporate them delicately into the preparation of the yolks. Spread this mixture in the dish and place in the refrigerator for 4 hours. Sprinkle sparingly with powdered cinnamon.
