Banana Rhubarb Muffins

Ingredients
220g of flour
130g of sugar
2 teaspoons of baking yeast
1 teaspoon of salt
1 pinch of cinnamon
1 egg
5cl of oil
2 ripe bananas
180g of diced rhubarb
Preparation
In a first bowl, mix the ingredients: flour, sugar, yeast, salt and cinnamon.
In a second bowl, whisk the egg, oil and mashed bananas.
Quickly mix the two preparations and add the rhubarb.
It is necessary to be satisfied to reduce the lumps and not to seek to have a very smooth dough (it is the secret of the puffed muffins!).
Pour immediately into a buttered and floured muffin tin.
Cook for 20 to 25 minutes at 180°C (thermostat 6).
