* Honey absorbs water so readily that any bacteria that attempt to colonize it have the water sucked out of their cells, thereby killing them. However, if you keep honey in an unsealed jar, it will absorb water from the atmosphere and eventually dilute itself enough that bacteria can survive on it, which causes fermentation; see the footnote in Section 7.3 for more.
