Anchovy and Cherry Tomato Pasta

12 ounces (350 grams) whole wheat farfalle pasta

1 can (2 ounces/50 grams), anchovy fillets, drained

2 garlic cloves, chopped

1 cup cherry tomatoes, halved

2 tablespoons chopped fresh parsley

Freshly ground pepper or dried red chile flakes

1. Bring a large pot of lightly salted water to a boil. Add the pasta and cook, stirring often, until cooked, 10 minutes. Drain and add to a bowl.

2. Meanwhile, place the anchovies, garlic, and tomatoes in a nonstick skillet over low heat and cook, stirring and crushing the anchovies a little, 3 to 4 minutes. Add the parsley and season to taste with pepper or chile flakes. Pour over the pasta.
