Yes, pizza, can be part of your Magic Foods eating plan, especially when you make your own with a thin whole grain crust, topped with lots of vegetables and a moderate amount of cheese. Using our Quick Whole Wheat Pizza Dough, you can bake your own wholesome pizza in about the same time it takes for delivery pizza to arrive at your door. We offer two toppings, one with meaty-tasting mushrooms and a variation with broccoli and olives.
12 ounces (340 grams) Quick Whole Wheat Pizza Dough or purchased whole wheat pizza dough
Cornmeal for dusting
1 tablespoon olive oil, divided
3 cups (8 ounces/250 grams) baby bella or cremini mushrooms, stem ends trimmed, wiped clean, and sliced
2 garlic cloves, minced
2 tablespoons chopped fresh parsley
Pinch of salt
Freshly ground pepper to taste
2/3 cup prepared marinara sauce
2 tablespoons chopped fresh marjoram or oregano
1/8 teaspoon crushed red pepper
1 cup shredded part-skim mozzarella cheese
1/2 cup diced red onion
1/4 cup grated Parmesan cheese
1. Prepare the Quick Whole Wheat Pizza Dough, if using.
2. Place a baking stone or inverted baking sheet on lowest rack of oven. Preheat the oven to 500°F (260°C) or highest setting. Coat a 12 1/2-inch (32-centimeter) pizza pan with nonstick spray. Dust with the cornmeal.
3. Heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring or shaking the skillet from time to time, until tender and lightly browned, 3 to 4 minutes. Add the garlic and cook, stirring, for 30 seconds longer. Remove from the heat and stir in parsley, salt, and pepper.
4. Mix the marinara sauce, marjoram (or oregano), and red pepper in a small bowl.
5. On a lightly floured surface, roll the dough into a 13-inch (33-centimeter) circle. Transfer to the pizza pan. Turn the edges under to make a slight rim around the outside edge. Brush the remaining 1 teaspoon oil over the rim. Spread the marinara sauce over the crust, leaving a 1/2-inch (1-centimeter) border. Sprinkle the mozzarella over the sauce. Scatter the mushrooms over the mozzarella. Sprinkle with the onion. Top with the Parmesan cheese.
6. Place the pizza pan on heated baking stone (or baking sheet) and bake until the bottom crust is crisp and golden, 10 to 14 minutes. One serving is 1/4 of a 12-inch (30-centimeter) pizza.

In Step 3, steam 2 cups broccoli florets (3/4-inch/2-centimeter pieces) until crisp-tender, 2 to 3 minutes. In Step 4, mix 2/3 cup prepared marinara sauce with 1 teaspoon dried oregano and 1/8 teaspoon crushed red pepper. In Step 5, spread the marinara sauce over the crust. Sprinkle 1 cup shredded part-skim mozzarella cheese over the sauce. Scatter the broccoli, 1/2 cup diced red onion, and 1/4 cup coarsely chopped, pitted kalamata olives over top. Spritz the top lightly with olive oil nonstick spray. Bake the pizza as directed in Step 6.
