Sweet and Sour Greens with Bacon

Pungent vinegar, salty turkey bacon, and sweet prunes enhance the flavors of Magic food mustard greens to make a delicious side dish that’s perfect alongside roasted chicken, fish, or pork. Or, serve over a bed of leftover brown rice or quinoa for a quick meal in minutes. Feel free to substitute spinach for the greens.

1 tablespoon extra-virgin olive oil

3 slices turkey bacon, cut into thin strips

3 cloves garlic, thinly sliced

24 cups (loosely packed) cleaned mustard greens, shredded

1/4 cup water

3 small pitted prunes, diced

1/4 teaspoon salt

2 teaspoons red wine vinegar

1 teaspoon honey

1/4 teaspoon hot sauce, or more to taste

1. In Dutch oven, heat oil over medium-low heat. Add turkey bacon and cook for 5 minutes, or until lightly crisped. Remove with slotted spoon. Add garlic to pan and cook for 3 minutes, or until golden brown.

2. Add mustard greens and toss to coat. Add water, prunes, and salt and cook, stirring occasionally, for 5 minutes, or until soft and tender.

3. Return bacon to pan along with vinegar, honey, and hot sauce and stir to combine. Serve hot.

Per serving: 163 calories, 10 g protein, 22 g carbohydrates, 10 g fiber, 6 g fat, 1 g saturated fat, 464 mg sodium.

Tip: Although this seems like a lot of greens, they shrink down when cooked.
