Roasted Tomatoes with Garlic and Herbs

This classic flavor combination of tomatoes, garlic, basil, and rosemary is not just for crisp salads. Here three Magic foods are tossed and roasted until soft to serve warm or chill for later. Serve on top of whole grain pasta, chicken breasts, or baked fish filet.

3 pounds (1.5 kilograms) plum tomatoes, halved lengthwise

2 tablespoons olive oil

5 garlic cloves, finely chopped

1/2 cup finely chopped fresh basil

2 tablespoons minced fresh rosemary

1 teaspoon sugar

3/4 teaspoon salt

1. Preheat oven to 250°F (120°C). Line a jelly-roll pan with foil.

2. In a large bowl, toss tomatoes with oil, garlic, basil, rosemary, sugar, and salt. Place tomatoes, cut-side up, in prepared pan. Bake for 3 hours, or until tomatoes have collapsed and their skins have wrinkled.

3. Serve at room temperature, or refrigerate and serve chilled.

VARIATIONS Balsamic Roasted Tomatoes with Garlic and Herbs

Add 1 1/2 tablespoons balsamic vinegar with the olive oil and tomatoes before roasting. Omit the sugar.

Cheesy Roasted Tomatoes with Garlic and Herbs

Prepare as listed above but while the tomatoes are roasting, place 8 ounces (250 grams) Bocconcini or small mozzarella balls in a bowl. Top with the warm tomatoes and toss to blend. Sprinkle with 2 tablespoons grated parmesan cheese. Serve immediately with crusty whole grain bread or over whole wheat penne pasta.
