Raspberry Sauce

Makes 1 1/4 cups

This elegant sauce is made by simply pureeing raspberries (frozen berries work just fine). Use it to dress up a compote of strawberries or mixed berries or as a topping for low-fat vanilla ice cream or yogurt. It does contain sugar, so keep your serving sizes small.

1 package (12 ounces/300 grams) frozen unsweetened raspberries, thawed

1/3 cup confectioners’ sugar

1 tablespoon orange juice

1. Put the raspberries, sugar, and orange juice in a food processor. Process until pureed. Pass the puree through a fine sieve set over a medium bowl. Discard seeds. One serving is a generous 1 1/2 tablespoons.
