Full of “good fats,” these highly savory nuggets are a perfect appetizer for better blood sugar.
2 teaspoons olive oil
2 garlic cloves
4 (2 x 1/2-inch/5 x 1-centimeter) strips orange peel
1 1/2 teaspoons fennel seeds
2 cups rinsed Kalamata olives
2 tablespoons orange juice
1. Heat olive oil in medium skillet over low heat until warm. Add garlic, orange peel, and fennel seeds. Cook, stirring, until fragrant, 30 to 60 seconds. Add olives. Cook, stirring, until warmed through but not hot, about 1 minute.
2. Remove from heat. Stir in the orange juice. Cover and let stand at room temperature for 1 hour. Serve at room temperature. One serving is 2 tablespoons. Refrigerate leftovers.
