Raspberry Beet Smoothie

While this smoothie is not enough for a meal, serve it along with your breakfast to add a slew of nutrients.

2 cooked beets, cooled and coarsely chopped

1/2 cup fresh or frozen raspberries

1 cup cranberry juice, chilled

1 cup low-fat plain yogurt

1. In food processor or blender, puree beets, raspberries, and cranberry juice until smooth.

2. Pour into 4 glasses and top with the yogurt. Serve immediately. One serving is 1 glass.

Per serving: 90 calories, 4 g protein, 18 g carbohydrates, 2 g fiber, 1 g total fat, 1 g saturated fat, 75 mg sodium.
