Walnut and Apple Spinach Salad

Ingredients:

1/2 cup walnuts

- 2 tablespoons extra-virgin olive oil

- 2 tablespoons white wine vinegar

- 1 tablespoon honey

1/2 teaspoon sea salt

1/2 teaspoon ground black pepper

- 3 tablespoons chopped red onion

- 2 large green apples, cut into thin slices

- 2 tablespoons golden raisins

- 6 ounces baby spinach, washed

- 3 ounces reduced-fat crumbled goat cheese

Directions:

1. Toast the walnuts in a large, nonstick skillet over medium heat, stirring every 3 to 4 minutes. Let cool on a plate.

2. Whisk the oil, vinegar, honey, sea salt, and pepper in a salad bowl.

3. Stir in the onions, apples, and raisins and then add the spinach and toss to coat evenly.

4. Sprinkle on the walnuts and goat cheese before serving.
