A pie is sometimes crowned with a topping, which should not only look nice but also complement the filling underneath. Billows of meringue add an ethereal finish, as well as height, to cream pies and citrus fillings. Whipped cream makes a fast and easy topping for almost any pie, and in spite of its richness, I think it blends particularly well with sweet chocolate, nut, and custard fillings. I’ve also included a chocolate sauce and a butterscotch sauce, both of which keep for weeks in the refrigerator and can be reheated for serving on a moment’s notice.
