Ingredients:
For the Dough:
3 cups of unbleached all- purpose flour
1 1/8 cup of warm water
3 tablespoons of nonfat dry milk
1 tablespoon of unsalted butter, cut into small pieces
1¼ teaspoon of instant or bread machine yeast
½ teaspoon of salt
Coarse salt
For the Water Bath:
¼ cup of baking soda
2 quarts of water
1 tablespoon of salt
Directions:
1. Add all the ingredients, except the coarse salt, to your bread machine pan according to the order suggested by the manufacturer.
2. Select Dough cycle and press start.
3. When the setting is done, place the dough on a surface that has been floured. Divide into 8 portions and shape into balls. Leave to stand for 15 minutes.
4. Preheat oven to 400F.
5. In the meantime, make the water bath. Add the baking soda and salt to the water and allow to boil.
6. Smash each dough ball gently into a flat bun-like form and drop the bun into the boiling water bath. Cook for 30 seconds, flip bun and cook for another 30 seconds.
7. Slice an X that is about ½-inch deep into each bun with a razor blade or serrated knife. Sprinkle the bun with the salt.
8. Bake in oven for 20-24 minutes.
