Loaded Sweet Potato Hash

Serves 4


6 large eggs

1 tablespoon Italian seasoning

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1/2 pound ground pork sausage

1 large sweet potato, peeled and grated

1 small yellow onion, peeled and diced

2 cloves garlic, minced

1 medium green bell pepper, seeded and diced

2 cups water

1 In a medium bowl, whisk together eggs, Italian seasoning, salt, and pepper. Set aside.

2 Press the Sauté button on the Instant Pot®. Stir-fry sausage, sweet potato, onion, garlic, and bell pepper 3–5 minutes until onions are translucent.

3 Transfer mixture to a 7-cup greased glass bowl. Pour whisked eggs over the sausage mixture.

4 Add water to the Instant Pot® and insert trivet. Place dish with egg mixture on trivet. Lock lid. Press Manual or Pressure Cook button and adjust time to 5 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid. Remove dish from pot. Let sit at room temperature 5–10 minutes to allow the eggs to set. Slice and serve.
