White Chicken Chili

This warmth-inducing, crowd-pleasing dish will have your friends asking if they can watch the game at your house every weekend. And not only will you have the winning dish of the day, but you will actually get to visit with your guests instead of being stuck in the kitchen cooking. Let your Instant Pot® do all the work!

Serves 4


1 tablespoon avocado oil

1 pound ground chicken

1 medium yellow onion, peeled and diced

1 stalk celery, diced

3 cloves garlic, minced

1 (28-ounce) can diced tomatoes, including liquid

1 (4-ounce) can diced green chilies, including liquid

1 teaspoon sea salt

1 tablespoon chili powder

1 tablespoon fresh thyme leaves

1 Press the Sauté button on the Instant Pot® and heat oil. Add chicken, onion, and celery; stir-fry 5 minutes or until chicken is no longer pink. Add garlic and sauté 1 minute.

2 Stir in remaining ingredients. Lock lid. Press the Manual or Pressure Cook button and adjust time to 15 minutes. When timer beeps, let pressure release naturally until float valve drops and then unlock lid.

3 Ladle into individual bowls and serve warm.
