This low-calorie vegetable soup is loaded with nutrients, and it is a great starter soup for a family that generally isn’t crazy about vegetables. Add chicken or sausage to make this a more complete meal.

4 cups vegetable broth
2 stalks celery, diced
1 small carrot, peeled and diced
1 small yellow onion, peeled and diced
2 cloves garlic, minced
1 (15-ounce) can diced tomatoes, including juice
1 medium turnip, peeled and diced
1 medium zucchini, diced
1 tablespoon Italian seasoning
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 Add all ingredients to the Instant Pot®. Lock lid. Press the Manual or Pressure Cook button and adjust time to 10 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.
2 Ladle into individual bowls and serve warm.
