1 tablespoon avocado oil
1 pound ground beef
1 medium yellow onion, peeled and diced
1 medium green bell pepper, seeded and diced
1 (15-ounce) can diced tomatoes, including juice
2 teaspoons yellow mustard
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon sea salt
4 cups beef broth
2 cups shredded iceberg lettuce
1/2 cup diced dill pickles
1 Press the Sauté button on the Instant Pot® and heat oil. Add beef, onion, and green pepper; sauté 3–5 minutes until beef begins to brown.
2 Add tomatoes, including juice, mustard, paprika, garlic powder, salt, and beef broth to pot. Lock lid. Press the Manual or Pressure Cook button and adjust time to 7 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.
3 Stir in lettuce and simmer 3 minutes. Ladle into bowls and garnish with diced dill pickles. Serve warm.
