2 tablespoons avocado oil
1 small red onion, peeled, halved, and cut into half-moons
4 large cloves garlic, minced
1 (28-ounce) can diced tomatoes, including juice
1/4 cup Kalamata olives, pitted and diced
1/4 cup green olives, pitted and diced
4 anchovy fillets, finely chopped or smashed with the back of a fork
2 tablespoons drained capers
2 teaspoons dried oregano
1/2 teaspoon dried red pepper flakes
1/2 cup chicken broth
2 tablespoons chopped fresh Italian flat-leaf parsley
1 Combine all ingredients in the Instant Pot®. Lock lid. Press the Manual or Pressure Cook button and adjust time to 10 minutes. When timer beeps, let pressure release naturally for 5 minutes. Quick-release any remaining pressure until float valve drops and then unlock lid.
2 Pour sauce into a lidded container or jar and refrigerate until ready to use. Use within 5 days.
