Purple Cauliflower

Purple Cauliflower is just so pretty, but this recipe works with orange and white cauliflower too. To take this dish from florets to cauliflower rice, just drain the water after cooking. Add the olive oil back to the pot. Press the Sauté button and use a potato masher to mash the cauliflower directly in the pot. Season with salt and pepper. Voila!

Serves 4


1 medium head cauliflower, cut into florets

1 cup water

Drizzle of extra-virgin olive oil

Pinch sea salt

Pinch freshly ground black pepper

1 Add water to the Instant Pot® and insert steamer basket. Add cauliflower. Lock lid. Press the Steam button and adjust time for 2 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.

2 Transfer cauliflower to a serving bowl. Garnish with olive oil, salt, and pepper. Serve warm.
