Red Onion and Apple Confit

The sweetness from the caramelized onions and apple are the perfect match to be served with a salty and hearty pork chop. This is also nice alongside scrambled eggs and leftover beef in the morning.

Serves 4


2 tablespoons ghee

1 large red onion, peeled, halved, and sliced into half-moons

2 large Granny Smith apples, peeled, cored, and thinly sliced

2 tablespoons apple cider vinegar

2 tablespoons honey

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 cup water

1 Press the Sauté button on the Instant Pot® and heat ghee. Add onion and apples; stir-fry 4–5 minutes until onions are translucent.

2 Add remaining ingredients to pot. Lock lid. Press the Manual or Pressure Cook button and adjust time to 10 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.

3 Simmer unlidded if there is any liquid remaining until it cooks off. Transfer mixture to a lidded container and refrigerate up to 1 week.
