Fermented foods are high on the “yes” list of the paleo diet. Kimchi, along with kombucha, sauerkraut, and pickles to name a few, have many health benefits. The probiotics in fermented foods aid in digestion and immunity and assist in the absorption of the nutrients in other foods you eat.

11/2 pounds chicken wings, separated at the joint if necessary
1/2 cup kimchi brine
1 cup water
1 cup kimchi
1 Add chicken wings and kimchi brine to a large plastic bag. Seal and shake. Refrigerate at least 30 minutes up to 2 hours.
2 Add water to the Instant Pot® and insert steamer basket. Add chicken wings to basket and pour in extra brine from the plastic bag. Lock lid. Press the Manual or Pressure Cook button and adjust time to 8 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid.
3 Transfer chicken wings to a large bowl and serve with kimchi.
