Steamed Dry-Rubbed Pork Spareribs

No sticky sauce needed here. These ribs will be as smooth as butter and have all the flavoring needed with the broad mix of simple spices.

1 rack pork ribs (about 31/2 pounds)

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup water

1 Cut ribs into 2-rib sections. In a large bowl, combine salt, pepper, paprika, chili powder, garlic powder, and Italian seasoning. Toss in rib sections to coat. Refrigerate covered at least 30 minutes or up to overnight.

2 Add water to the Instant Pot® and insert trivet or steamer basket. Arrange ribs standing upright with the meaty side facing outward. Lock lid. Press the Manual or Pressure Cook button and adjust time to 30 minutes. When timer beeps, let pressure release naturally until float valve drops and then unlock lid.

3 Transfer ribs to a platter and serve warm.
