Herbed Cod with Yellow Squash

The flavorful herb sauce is a fresh, creamy topping for the firm and flaky cod. The squash is a savory companion filled with vitamins A and C, potassium, and fiber. The steam in the Instant Pot® keeps this a moist and quick dish to make in a snap.

Herb Sauce

1/4 cup mayonnaise

1/2 teaspoon fresh lemon juice

1/4 teaspoon lemon zest

2 teaspoons Italian seasoning

1 small shallot, peeled and minced

Pinch sea salt

1/4 teaspoon freshly ground black pepper

Cod and Squash

2 (6-ounce) cod fillets

1/2 teaspoon sea salt

1 cup water

1 large yellow squash, sliced into 1/4" circles

1 In a small bowl, combine mayonnaise, lemon juice, lemon zest, Italian seasoning, shallot, salt, and pepper. Refrigerate covered until ready to use.

2 Season cod with salt.

3 Add water to the Instant Pot® and insert steamer basket. Place squash evenly on basket. Set cod atop squash. Lock lid. Press the Manual or Pressure Cook button and adjust time to 3 minutes. When timer beeps, let pressure release naturally for 2 minutes. Quick-release any remaining pressure until float valve drops and then unlock lid.

4 Transfer fish and squash to plates. Place a spoonful of the herb sauce on each cod fillet. Serve warm.
